Potato Soup

Ingredients

2 tablespoons margarine
1/4 cup chopped onion
2 cups diced potatoes
1 cup boiling water (to boil potatoes)
1 teaspoon salt (if desired)
1 pinch dried basil (or other herb of your choice)
3 cubes chicken bouillon
2 tablespoons flour (to thicken)
3 cups milk
1 tablespoon chopped fresh cilantro (to your liking)
1 cup shredded sharp Cheddar cheese
Directions
Melt margarine in a large pan. Add onions sweat (cook) until translucent (clear).
Add water, potatoes, bouillon cubes, basil & salt (if desired) to pan. Cover and boil for 12 minutes or until potatoes are tender.
Mix flour into milk in a separate bowl. Slowly pour milk mixture into pan with potato mix. Cook over medium low heat until thickens (may need more flour). Stir in cilantro.
Pour into 4 serving bowls. Top with cheese.
