Fried Rice for Shrimp/Chicken

Ingredients

1 bag Uncle Ben's Boil in a Bag Brown Rice
3 egg whites
1/2 cup snap peas
1/2 cup dole pineapple chunks
1/4 cup spinach
Directions
Boil rice.
Stir fry snap peas and spinach in spray cooking butter, add salt and pepper to taste. Add pineapple chunks, halfed, to the peas then set aside. Use the same skillet to scramble the egg whites.
When rice is done use the butter spray (instead of real butter) to keep rice separated, about 2 servings. Add veggies and stir until mixed. Makes four servings. Add shrimp or chicken for a low-cal meal.
