Introduction

Prep time does NOT include the overnight soak of dried beans. If using canned you will not need it. Prep time does NOT include the overnight soak of dried beans. If using canned you will not need it.
Number of Servings: 3

Ingredients

    60g dried red kidney beans
    80g dried black beans
    1/2 packed McCormick Hot Chili Seasoning
    1 can (400g) chopped tomatoes
    1 yellow onion, diced chunky
    Water/stock (optional, stock may up the calorie count)

Directions

Go through beans, picking out any small stones/debris/bad beans), soak beans in water overnight.

Next day, drain beans and rinse. Boil in fresh water on the stove for 5-10 minutes, drain.

Put all ingredients into the crock pot, thin the mixture with water/stock if desired.

Cook for 6 hours on high, longer on low if you want to leave in simmer while you're at work.

  • I'm going to try this for tonight.. but I have white kidney beans instead of black (and I have red) plus I love garlic so I will chop up a few cloves. Oh and I prefer tomato paste so I will add a can of that. I also top a bowl with low fat cheddar and scoop with baked tostitos! - 2/26/11
