Grilles Salmon w/ Corn Salad

Ingredients

3 cups frozen corn
1 red pepper chopped
4 scallions sliced thin
1/2 c cilantro
1 jalapeno pepper (remove seeds) chopped thin
3 tbsp cider vinegar
1 tbsp honey
1 tbsp olive oil
1 tsp dijon mustard
3/4 tsp salt
4 (5 ounce) salmon fillets
Directions
1. Preheat oven to 425. Spary baking sheet with nonstick spray. Spread corn on baking sheet. Roast stirring occasionally until lightly browned, about 20 min and cool completely.
2. Meanwhile combine bell pepper, scallions, cilantro, jalapeno pepper, vinegar, honey and 2 tsp of oil, mustard and 1/4 tsp of salt in large bowl. Stir in corn. Cover and chill until ready to serve.
3. Rub salmon with remaining 1 tsp of oil and remaining 1/2 tsp of salt. Heat a grill pan (or outside grill) over medium high heat. Cook salmon until browned on outside and just opaque center, about 4 min per side.
Serve with 1 cup salad
