Ingredients

    1/2 cup canola oil
    1/2 cup applesauce
    1 cup granulated sugar
    2 eggs -beaten
    1 teaspoon vanilla
    2 teaspoons cinnamon
2 cups self - rising flour
    1/2 cup 2% milk

    1 cup granulated sugar
    1 cup water
1 tablespoon balsamic vinegar (may substitute lemon juice)
    2 tablespoons cornstarch
4 cups fresh blackberries-rinsed and drained

Directions

*Preheat oven to 350 degrees
** Lightly oil and flour a 9 inch by 13 inch baking pan

In a medium bowl mix together:

Oil,applesauce,sugar,eggs, vanilla and cinnamon.
Stir to blend.

To this mixture add self-rising flour and stir until blended, gradually add the half-cup of milk. Beat by hand until smooth.

Pour into prepared pan and bake in 350 degree oven on center rack for 25 minutes or until toothpick inserted in center comes out clean.

While cake bakes, prepare blackberries.

In medium sauce pan add
1 cup water
1 cup granulated sugar
1 tablespoon balsamic vinegar or lemon juice

Cook over medium heat stirring until sugar dissolves and mixture starts to simmer.

Toss rinsed blackberries with cornstarch and add to sugar syrup. Cook until sauce starts to thicken slighly and remove from heat.

When cake is done, remove from oven and place pan on wire rack. Cool in pan until warm to touch. Use a wooden dowl or the handle of a wooden spoon to poke holes in top of still warm cake. Por berry sauce evenly over the top of cake and allow the cake to finish cooling.

Once cool, cut in 24 pieces and serve each serving with a dollop of cool whip if desired.

* * Note Cool Whip is not included in the calorie count.
