Ingredients

    1.5 Tbsp lemon juice
    1T olive oil
    1.5 tsp honey
    1tsp dijon mustard
    1/4 tsp salt
    1/4 tsp pepper
    5 cups fresh baby spinach
    1 cored and thin sliced braeburn apple

Directions

Combine the lemon juice, olive oil, honey, dijon mustard, salt and pepper and whisk. Toss with spinach and apple slices and serve.
