Creamy Broccoli Soup

Introduction

Using chicken stock, a blender and laughing cow cheese wedges, make a creamy broccoli soup that is NO GUILT!! Using chicken stock, a blender and laughing cow cheese wedges, make a creamy broccoli soup that is NO GUILT!!
Number of Servings: 3

Ingredients

    1/2 cup each chopped onion, carrots, celery
    3 cups fresh broccoli stems and florets
    3 cups chicken stock
    1/2 cup chopped sweet red peppers
    2 Tblsp olive oil (may use less)

    Croutons & parmesan cheese to garnish (figured in calorie count!)

Directions

Saute onion,carrots and celery in olive oil until tender. Add broccoli and saute 2 minutes, add peppers, saute 1 minute more.

Add 3 cups chicken stock to pan, cook on medium until broccoli is tender.


Blend roughly half of soup mix in blender, adding the 2 wedges of laughing cow cheese to blender, pour back into soup pot.

Season to taste with salt and pepper, and red pepper flakes

Ladle into bowl, top with 1 serving of croutons and 1 Tblsp of parmesan cheese.
