Yummy Yam Bars

Ingredients

1 1/4 cups cooked, mashed yams , sweet potato OR pumpkin
2 cups rolled oats
1/2 cup lowfat buttermilk
2 tbsp ground flax seed
1/4 cup maple syrup
1 tbsp ground cinnamon
1/8 tsp ground nutmeg
1/8 tsp ground ginger
1/8 tsp ground cloves
1/4 tsp cardamom
2 tbsp melted coconut oil
1/2 cup unsweetened, unsulphured dried cranberries (or raisins)
1/3 cup raw, unsalted pumpkin seeds
2 packets stevia
ICING
2/3 cup sour cream
2 packets stevia
2 tbsp icing sugar
TINY splash vanilla
Directions
Preheat oven to 400 degrees. Lightly grease a square baking dish.
Place mashed potatoes in a medium sized mixing bowl. Add all ingredients, mix well. Spread into baking pan. Bake for about 30 minutes or until golden brown.
Allow to cool completely.
Combine icing ingredients and spread over cooled bars. Cut into 12 pieces.
Makes 12 yummy bars.
