Eggplant - sliced
tomatoes - 1 cup chopped
mozzarella - 1 cup shredded
garlic - 1 clove chopped
oil - 3 tb
salt & pepper to taste
dust eggplant with flour, fry in 2 tb oil;
meanwhile place chopped tomatoes in pan; add garlic and salt and pepper and 1 tb oil; simmer for 15 min.
put a little tomatoes in bottom of 9x12 dish; line with eggplant; top with cheese; cover and bake at 350 degrees for 30 min.; remove cover and cook another 15 min.
