Recipe my daughter made up because she ran out of all the almonds she needed for almond butter. This recipe is only 50% of the calories of regular peanut butter! Quite nice! Ingredients

1/2 cup dry roasted almonds
1/2 dry roasted cashews (salted)
2 Tbsp Extra Virgin Olive Oil
1 packet of Splenda sweetener
Directions
In a food processor, chop almonds and cashews until they resemble course cornmeal and start to stick to the sides of the bowl.
Add olive oil 1 Tbsp at a time blending until the mixture is creamy. Add 1 packet of Splenda sweetner and blend for another 10 - 15 seconds.
Delicious with a whole grain waffle in the morning accompanied by strawberries!
