Introduction

This is my home version of Menu item #171 at El Vaquero. They serve it on a flour tortilla, but I think it's great as is without the added calories and carbs or the tortilla. Ingredients

    3 Chicken breasts cut into bite sized pieces
    1 package of Chorizo sausage (remove casing)
    1 can pineapple drained
    1 cup mexican blend cheese

Directions

Cook chicken in skillet until no longer pink. Add uncased Chorizo sausage and mix well. Add 1 can of drained pineapple. Top with cheese when ready to eat.
