Carrabba's Copy Cat Sausage Lentil Soup

Introduction

We love Carrabba's sausage lentil soup, so I found several on-line that were similar to it and came up with this version myself. We love Carrabba's sausage lentil soup, so I found several on-line that were similar to it and came up with this version myself.
Number of Servings: 10

Ingredients

    1.25 lbs Italian Sausage (pork, chicken or turkey)
    1 medium onion, chopped
    2 large carrots, peeled and chopped
    1 stalk celery, chopped
    1 small zucchini, chopped
    1 can diced tomatoes or 2 fresh tomatoes, diced
    6 C chicken broth (low-sodium, no MSG)
    2 C dried lentils
    3 garlic cloves, minced or pressed
    1 t sea salt
    1/2 t black pepper
    1/2 t red pepper flakes
    1 t oregano
    1 T dried parsley
    1 sprig fresh thyme (remove before serving)

Directions

In dutch oven or large pot, brown sausage with onion, carrots and celery. Drain any fat when sausage is cooked thoroughly. Vegetables will not be thoroughly cooked but will finish cooking with the rest of the ingredients. Add all other ingredients. Bring to a boil. Reduce heat, cover and simmer for one hour or until lentils are thoroughly cooked.

Remove thyme before serving.

Makes 10 servings.

Serving suggestion: Sprinkle with fresh grated parmesan cheese and serve with a whole wheat baguette.
