Introduction

A lovely summer salad from the
Eat, Shrink and Be Merry Cookbook by Janet and Greta Podleski. Approval was given to share the recipes.
(From the original recipe, I substituted two cans of mixed beansa for 1 can each of chickpeas, black beans and kidney beans)

Number of Servings: 9

Ingredients

    2 cans of Primo mixed beans
    2 cups frozen corn cooked
    2 cups fresh green beans (or frozen cooked) (not canned)
    1 cup chopped red pepper, or mixed colors
    1 cup diced red onion
    1/2 cup chopped parsley

    For marinade:
    1/4 cup olive oil or canola oil
    1/4 cup cider vinegar
    2 TBS granulated sugar
    1 tsp Dijon mustard
    1/2 tsp celery seed
    fresh black pepper to taste

Directions

Rinse beas thoroughly. Then mix the beans, corn, peppers, green beans and onions together. Mix the marinade and toss well. Cover and refrigerate, stirring occasionally. The recipe says to let marinate overnight, and that would be ideal....but usually we eat if after a couple of hours.

  • Super easy to make and it makes a large amount! I left it in the fridge overnight and stirred it a few times. When making it, I was worried that the marinade wasn't enough volume to adequately marinate the salad, but it was! I'll definitely make it again and again! - 5/9/12
