Tomato Chickpea Curry

Ingredients

    * 1 tablespoon canola oil
    * 1 large onion, chopped
    * 3 tablespoons minced peeled fresh ginger
    * 3 garlic cloves, minced
    * 1 tablespoon garam masala
    * 1 1/2 teaspoons mustard seeds
    * 1 teaspoon cayenne pepper
    * 1 teaspoon sugar
    * 1/2 teaspoon ground turmeric
    * 2 (15 1/2-ounce) cans chickpeas (garbanzo beans), rinsed and drained
    * 1 (28-ounce) can diced tomatoes, undrained
    * 3 tablespoons chopped fresh parsley

Directions

Heat oil in a large nonstick skillet over medium heat. Add onion, ginger, and garlic; cook 5 minutes. Stir in garam masala, mustard seeds, and red pepper; cook 2 minutes, stirring frequently. Stir in remaining ingredients except parsley; bring to a boil.

Reduce heat, and simmer 35 minutes, stirring occasionally. Remove from heat; stir in chopped parsley.
