Number of Servings: 12

Ingredients

    1 clove garlic
    2 lbs white meat chicken
    1 lb dark meat chicken
    1 lb Hillshire smoked sausage
    2 tbls salt
    1/2 tsp red pepper
    4 tbls olive oil
    1 med. onion, chopped
    1/2 cup celery, chopped
    1/2 cup bell pepper, chopped
    1/2 cup scallion
    8 cups water
    2 cups raw rice.

Directions

you need a big stew pot. cut chicken into bite sized pieces. put half in bag with half the salt and half the red pepper. brown chicken in oil. do same to second half. remove when brown and then cook in same pan the onions, celery and bell pepper (all chopped) until tender. 4-6 minutes. Add into the pan the water, rice, chicken,sausage(cut into bite sized pieces) and garlic. mix well. cover pot and brng to boil then reduce tolow until rice is done. approx. 2 hours from start to serve. Makes 12 one cup servings.
