Couscous Chicken Salad

Number of Servings: 6

Ingredients

    1 14-oz can chicken broth
    2 cup dry couscous
    1/2 cup mango chutney
    1/4 cup vinaigrette dressing
    8 oz cooked, seasoned chicken (lemon pepper works well)
    1 cup chopped cucumber

Directions

1. In a medium saucepan, bring chicken broth to boiling. Add couscous and stir. Cover and remove from heat. Let stand for 5 minutes. Fluff with a fork.

2. In a medium bowl, combine mango chutney and vinaigrette dressing. Add chicken and cucumber. Toss to coat. Add couscous and stir until well combined. Serve. Yum!
