Throw Together Southwest chicken Casserole

Introduction

I just pulled the ingredients out of the fridge and cupboard, layered the ingredients into a 8 x 8 square baking dish, turned the oven to 325 and baked for 2 hours while I was at the gym.

I also used low sodium black beans, sodium free stewed tomatoes, 75% fat free cheese
The ingredients that I actually used are different from the ingredients that are found in the Spark data base so the sodium number is actually lower.

Ingredients

    2 Boneless, skinless Chicken Breast
    1/2 can sodium free Beans, black
    1/2 can Green Chili Peppers,
    1/2 medium Onions chopped
    1/2 can sodium free Stewed Tomatoes (OR Salsa)
    1/2 small can Black Olives,
    1/3 cup Cabot 75% Light Vermont Cheddar shredded

    1 TBS taco seasoning mix, home made or packaged (this is not figured into the nutrition info.

Directions

Spray a 8 x 8 inch pan with Pam or other cooking spray.
Mix taco seasoning with the stewed tomatoes if using that method.
Add chicken breast and layer the rest of the ingredients in which ever order you desire, topping with cheese.

Bake at 375 for 30 minutes.

Makes approximately 3 servings - use common sense for the serving size.

I served this with a low sodium, low carb tortilla wrap.
