Number of Servings: 4

Ingredients

    1 Tbl olive oil
    1 leek, washed & sliced
    1 small onion, diced
    3 cloves garlic, thinly sliced
    2 celery sticks, diced
    2 small potatoes, peedled & diced
    2 head broccoli, cut into florets & stalks diced
    1.5l chicken stock
    1 Tbl Dijon mustard

Directions

Heat the oil in a saucepan, then add leek, onion, garlic and celery. Sweat for 2 minutes then add potatoes and cook on medium for 8-10 minutes. Add broccoli stalks, and stock, Toss in florest and cook on low for 5-8 minutes. Remove some florest for garnish, add the mustard then puree soup in a blender.

Perhaps serve with beef and spinach meatballs.
