This dough will store for up to 2 weeks, although it disappears a lot quicker than that and has never made it to 2 weeks in our house.

Ingredients

5 1/2 cups (715g) wholemeal all purpose (PLAIN) FLOUR (do NOT use bread flour)
2 cups (280g) white all purpose (PLAIN) Flour (again do NOT use bread flour)
1 1/2 tbsp granulated yeast
1 tbsp kosher salt (if using table salt use about 3/4 of that amount)
4 tbsp vital wheat gluten (UK Spark members will be able to get this from fishing tackle supply places, apparently they use it to make processed bait, it will be sold as just wheat gluten)
4 cups lukewarm water (about 100f) (UK members please note that a UK cup is slightly larger than a US cup, so use 900ml!)
1 - 2 tbsp mixed seed for on the top of the loaf.
