Meatloaf with a Surprise

Introduction

Number of Servings: 4

Ingredients

    1/2 lb ground beef
    1/2 onion, chopped fine
    1 zuchini squash, chopped fine
    3 garlic cloves, chopped fine
    1/2 cup bread crumbs
    1 egg

    2 oz Mozzarella cheese, on the side

Directions

Mix first 6 ingredients with your hands until well blended. Separate into 2 halves.
Roll each half into a ball then flatten it out in the palm of your hand.
Place 1 oz of mozzarella cheese in the center and close it up. Shape it to look like a small loaf.
Repeat with the second ball or you can make 4 smaller balls. (They will take less time to cook.)
Bake at 350*F for 30-45 minutes.

    great idea to get the green veggies into a meal but next time i will add a little more spice as it was a little bland but i will make again cuz it was very easy. - 5/24/07

    I shredded the zucchini so had no problem blending it with the meat. Added a spoonful of pizza sauce on top during the last few minutes of cooking so added in the extra cals. Easy to make and flavorful makes a great pizza meatloaf! - 4/26/07

    I liked this one a lot! Even my junk food loving boyfriend went back for more. My only problem was getting the zucchini choppped finely enough. I'll use the food processor next time. - 4/11/07

    I don't think I chopped things fine enough because I couldn't roll it in a ball with cheese in middle. It had a different taste than normal meatloaf, probably without the tomato sauce. But the different taste was good. - 3/28/07

    We learned the hard way that 'chopped fine' means FINE. A food processor takes care of that issue nicely, however. It tasted great and I love the glob of cheese in the middle. These are great cold too! Don't have to reheat for lunches :). - 3/28/07

    This is verry yummy and so easy to make, it has become my fiance's "signature dish". He doesn't chop the veggies as fine which gives the dish a great texture, but its a good way to sneak veggies in for picky kids. - 3/14/07
