Red Wine Risotto with Swiss

Introduction

This dish takes a little time and patience, but will give you a creamy, delicious rice dish in the end! You can also add other ingredients like mushrooms, shrimp or chicken for variety and turn it into a main dish. This dish takes a little time and patience, but will give you a creamy, delicious rice dish in the end! You can also add other ingredients like mushrooms, shrimp or chicken for variety and turn it into a main dish.
Number of Servings: 4

Ingredients

    1 Tbs Olive Oil
    1/2 cup Onion, diced
    1 Cup Rice
    1 Cup Chicken Stock
    1 Cup Water
    1/2 Cup Red Wine
    1/4 Cup Swiss Cheese, shredded

Directions

Heat Olive oil in medium saucepan over medium heat

Saute chopped onion for 4 minutes (until clear)

Add rice and saute for another 2 minutes

Slowly add chicken stock 1/2 cup at a time until absorbed by the rice, stirring slowly.

Once all the stock is in, add water 1/2 cup at a time, still stirring until absorbed.

After the water is added, add red wine, again, stirring until all is absorbed.

Just before serving, stir in shredded swiss cheese. Add salt and pepper to taste.

Makes 4 Side servings or 2 Main Dish Servings (Double the nutritional info if eating as a main dish)
