Fluffy Pumpkin Muffins

Ingredients

1.5 cups Fiber One Complete Pancake Mix
1/2 cup oat bran
1/2 cup apple sauce
1 can (15oz) pumpkin
1/2 cup skim milk
1/4 cup brown sugar
1 tsp cinnamon
1/2 tsp ginger
1/2 tsp allspice
1/2 tsp nutmeg
pinch salt
1/4 cup pumpkin seeds to top
Directions
Mix all ingredients except seeds together and fill one muffin tray - I sprayed mine instead of using muffin cups, but either would work I assume.
Sprinkle top of each muffin with pumpkin seeds.
Bake at 425 for 20 min or until pick comes out clean.
*Edit - these are DELICIOUS and more savory if you leave out the sugar which I did on the first batch (which also takes them down to 90 calories each) and spread with a Laughing Cow Cheese on top. Yum!
