chicken barley chili

Ingredients

    1 can beans, pinto or black
    1 can fire-roasted tomatoes, chopped
    1 can tomato and green chilies, chopped
    1 lb chicken breasts or tenders
    1 packet chili seasoning
    2 cups chopped zucchini
    1 cup chopped onion
    2 cups chopped red/green bell peppers
    1 cup raw barley

Directions

Put all ingredients except barley in crockpot. Cook on low for 6-7 hours, or high for 3-4 hours (until chicken is done). Add the barley and cook for another hour or so, until barley is softened. Shred chicken.
