Oriental Mandarin Chicken Salad

Number of Servings: 4

Ingredients

    1 large chicken breast, boneless, skinless
    4 c. shreaded/sliced red cabbage
    2 scallions, thinly sliced
    1 can mandarin oranges (6.1 oz)
    3 Tbsp. sliced almonds
    1/3 c. cucumber slices, quartered
    dressing:
    1/3 c. cider vinegar
    3 Tbsp. splenda
    1 Tbsp. soy sauce

Directions

In a large bowl combine cabbage, scallions, mandarin oranges, almonds and cucumber. Boil chicken over meduim-high heat until cooked through. Dice chicken and add to salad. In a jar combine vinegar, splenda and soy sauce and shake until blended. Pour over salad and toss. Serve immediately or chill for 3-4 hours (for more blended flavor).
