magical peanut butter cookies

    1 cup peanut butter
    1 1/3 cup splenda
    1 egg
    1 tsp vanilla extract

preheat to 350. grease large baking sheet
combine peanut butter, egg, sugar and vinilla in large bowl. roll into balls and place on baking sheet. with a fork, dipped in splenda, make a criss-cross pattern on balls. bake for 12 min., remove from oven and sprinkle with more splenda. cool slightly before removing from pan.
makes 18 cookies

  • I just made these and they are FANTASTIC! I used 1/2c reduced fat peanut butter and 1/2c dark chocolate almond butter. I reduced the splenda to just over 1/2c. Will definitely make these again, and maybe try PB2 to get them even less fattening! Thanks for sharing! Yummy! - 4/8/11

  • I can't stand the taste of artificial sweeteners so I made these with regular sugar. I did cut the amount down to 3/4 of a cup though. I made them a little smaller so I ended up with 24. 1 cookie is 91.5 calories and just under 6 grams of fat. Not bad for using the real thing! - 8/7/08
