Mediterranean Pasta Salad

Introduction

This is a fresh take on a picnic and potluck favorite. The whole foods make it tasty, filling and colorful. The fast and easy prep is an added bonus!

Give this recipe a sophisticated Greek flair by adding some crumbled feta cheese, or more Italian with a sprinkle of freshly grated Parmigiano Reggiano (not included in nutritional calc.).

Ingredients

    3 cups dry whole wheat rotini pasta (Mueller's preferred)
    1 medium tomato, chopped
    1/4 cup cucumber (with peal), chopped
    4 marinated artichoke heart quarters (jarred), chopped
    4 pimento stuffed green olives, thinly sliced
    8-10 leaves fresh basil, coarsely chopped
    1 clove garlic, finely chopped
    2 Tbsp extra virgin olive oil
    1 Tbsp balsamic vinegar
    Salt & pepper to taste

Directions

Salt several cups of water, boil, and add pasta. Cook until slightly less firm than al dente, about 8-10 min.

Meanwhile, toss remaining ingredients in a medium bowl and allow to chill in fridge.

Strain pasta and cool under running water. After sufficiently cool, add to tomato mixture. Toss until vegetables are incorporated. Add sea salt and freshly ground pepper to taste.

Makes 14 half cup servings.

*Salt is not included in nutritional calculation as this depends on your taste
