Egg salad

Introduction

Very low carb, high in protein, and not completely terrible in cholesterol - all of which I have to watch! I love having this on a whole wheat wrap. Great, quick lunch. Ingredients

    4 - Egglands Best large eggs
    1.5 tbsp - Light Mayo
    3 tsp (or to taste) - Yellow mustard
    1.5 tbsp - pickle relish (or you can omit - just according to your preference)

Directions

Boil the eggs for 15 minutes. Let them cool. Peel the eggs slice up. Place in a bowl with the remaining ingredients. I usually use a fork to mix so that I can shred the egg whites at the same time. You can change the amounts according to what you like, but it will alter the nutrition info. I usually taste it and alter as necessary. I usually serve on a whole wheat wrap or on some lettuce.
