Ingredients

    2 Egg Whites
    2 Tbsp Water
    2 Tsp Vanilla Extract

    1 Pound Pecans (4 C)

    1 1/2 C Splenda
    2 Tbsp Ground Cinnamon
    1 1/2 Tsp Salt

    Cooking Spray (PAM)

Directions

Turn oven on to 350 degrees.

While oven is preheating, place egg whites, water, and vanilla in a large glass bowl. Whip until peaks form. (I use a hand mixer.)
(Do not use plastic as egg whites don't whip up well because of oils held in the plastic.)

Gently fold in pecans.

Mix Splenda, Cinnamon, and Salt together. Add to Egg/Pecan mixture. Mix until all dry ingredients are moist and stuck to pecans.

Spray bottom of 9 X 13 baking pan. Spread mixture evenly on bottom of pan. Bake 10 minutes.

Remove from oven. Stir nuts. (I use a metal spatula.) Bake 10 more minutes.

Remove from oven, stir nuts and bake for 10 more minutes. If not done, bake for another 5 minutes.

Excellent warm from the oven or cooled for a snack later.
