Beef & Black Bean Chili with Fresh Peppers

Ingredients

    2 pounds cubed beef round (or I use stew beef and trim the fat)
    14oz can diced tomatoes, No Salt
    6oz can tomato paste
    Approximately 1.5-2 cups no-salt beef stock
    2 fresh jalapeño peppers diced
    1 bell pepper diced (Red, Green, Yellow..whatever I have on hand)
    2 stalks celery, diced
    1 medium sweet onion, diced
    3-4 cloves garlic, minced or grated
    1 teaspoon cumin
    1 teaspoon oregano
    2 tablespoons chili powder
    1 teaspoon ground cayenne (or to your taste)
    1/2 to 1 teaspoon black pepper (to your taste)
    1 can black beans, rinsed (or other type of bean you like)
    Fresh cilantro (optionial, I only use when it's onhand)

Directions

Sauté up the onions till they're soft, use a little stock if needed instead of oil. Add the beef a little at a time to sear it without creating a lot of extra juice. When beef is nicely browned, add all other ingredients, bring to boil. Reduce, cover and simmer for 30-45 minutes. Stir occasionally, add stock if needed. At the last 15 minutes or so, add black beans, or beans of choice and fresh cilantro.

I serve this over brown rice, garnished with sour cream and cheese.

Serving = 1 Cup
