Mushroom salsa rice

Number of Servings: 4

Ingredients

    2 cups mushrooms, sliced
    1/2 packet taco seasoning (6 tsp)
    6 tbsp spicy salsa (or mild if prefered)
    1/2 can low sodium cream of mushroom soup
    1 cup brown rice (dry)
    1.5 cups water

Directions

1.spray skillet with cooking spray and lightly saute the mushrooms, set aside
2.mix all ingredients including mushrooms into a saucepan and bring to a boil.
3.Turn down heat to low, cook for 40 minutes , lightly uncovered until the rice becomes soft and the liquid evaporates.
