Introduction

This is the low carb version of the Impossible Pie. This can be changed by using different veggie, different cheese, adding some meat. Using onion instead of mushrooms and olives. Ingredients

    1 egg
    1 Tbsp. sour cream
    1/2 cup cauliflower
    1/8 cup canned mushrooms
    4 olives sliced
    1/4 cup cheddar cheese
    desired spices

Directions

Beat the egg with 1 T sour cream. In a greased ramekin, place cauliflower, mushrooms and olives. Pour egg mixture over cauliflower then top with 1/4 cup cheddar cheese and sprinkled with some spices. I used about 1/8 tsp.oregano & parsley. Bake at 350 about 20 minutes or until egg is set and cheese is melted.
