Coleslaw KFC Low Carb

Ingredients

    8 cups cabbage -- finely chopped
    1 medium carrot -- shredded
    2 tablespoons onion -- minced
    5 packets sweetener less and add to taste
    1/8 teaspoon pepper
    1/4 cup sour cream
    1/2 cup mayonnaise
    1 1/2 tablespoons white vinegar
    2 1/2 tablespoons lemon juice

Directions

Be sure cabbage and carrots are chopped up into very fine pieces. Combine the sugar, salt, pepper, cream, mayo, sour cream, vinegar, and lemon juice in a large bowl and beat until smooth. Add the cabbage, carrots, and onion, and mix well. Cover and refrigerate for at least 2 hours before serving.

Serves 10-12. Great for a Pot Luck or picnic!

  • Very nice! I guessed at the salt mentioned in the directions at 1/4 tsp. Figured out that 12 servings = 1/2 cup. Our family loves coleslaw and finding good Lc'ing recipes is key. - 7/16/12
