Cottage Cheese & Feta Eggs

Introduction

This is a recipe my late husband used to make me when we were first married. I had never had cottage cheese in my eggs and had never heard of feta, so I was sceptical until I tried it...it is one of my favorite ways to eat my eggs. Number of Servings: 1

Ingredients

    3 Egg Whites (or use can use egg beaters)
    1/8 C Feta Cheese
    1/4 C Low Fat Cottage Cheese
    Ground Pepper to taste

Directions

Spray small frying pan with cooking spray and cook feta and cottage cheese over medicum heat until they start to melt.

Add egg whites and continue to cook until egg whites are done/firm.

Add ground pepper to taste and eat.

Makes 1 serving
