Natalie's just like take-out Fried Rice

Introduction

A great recipe to make when you have leftover meat of any kind. The original calls for 1/4 cup of peanut oil or coconut oil for stir-frying, but I halved that to cut the fat. I think you could use even less, because the eggs don't really need to be fried in oil. I also use light soy sauce to cut the sodium, and depending on the saltiness of your meat, you might be able to use less. Don't leave out the chili garlic sauce, it makes a HUGE difference for such a small amount. It can be found in the asian section of the grocery store. Ingredients

    2 tbsp coconut or peanut oil (coconut for this calculation)
    2 eggs
    1 cup cooked, diced meat (tukey tenderloin in this case)
    1 cup diced red pepper
    1 cup diced sweet onion
    1 cup frozen sweet peas, thawed
    3-4 cups cooked rice (I used 4 servings of Minute brown
    rice, which is a little less than 4 cups)
    1/4 cup soy sauce (I use lite)
    1 tsp chili garlic sauce
    4 green onions, sliced
    1 tsp sesame oil

Directions

In large skillet or wok, heat 1 tbsp oil at med-high for 2 minutes. Add eggs and cook one minute on each side. Remove and chop, set aside.
Heat remaining oil in skillet or wok, add meat, onion, and pepper. Stir-fry for 5 minutes.
Add peas, rice, soy sauce, and chili garlic sauce. Stir-fry 3-4 minutes, or until heated through.
Stir in egg and top with green onion. Sprinkle with just a little sesame oil for authentic flavor.
serving= 1 cup each. This recipe made just under 7 cups.
