Polynesian Sweet and Sour Shrimp

Polynesian Sweet and Sour Shrimp

Number of Servings: 4

Ingredients

    14 ounces shrimp, peeled and deveined
    8 ounces pineapple chunks in juice, use tidbits
    2 tablespoons brown sugar
    2 tablespoons cornstarch, dissolved in 1/2c. water
    1 medium onion, chopped coarsly
    1 medium green pepper, chopped coarsly
    1 tablespoon soy sauce
    1/2 cup pineapple juice
    1/4 teaspoon salt
    1/2 teaspoon garlic salt
    1/8 teaspoon black pepper
    3 tablespoons vinegar

Directions

Sauté onion and green pepper until tender but not soft, in pan sprayed with cooking spray. Add remaining ingredients. Simmer until shrimp is tender and pink (20-30 minutes). Serve with rice.
