Bean and Ham Soup

Number of Servings: 8


    3/4 Pound fully cooked ham cubed
    1 medium onion, chopped
    2 cloves garlic, minced
    2 T. Butter
    2 cans (16 ounces) Great Northern Beans, rinsed and drained.
    3 cups chicken broth
    2 cups water
    1 cup peeled diced potatoes
    3/4 cupt diced carrots
    3/4 cup diced celery
    1/4 tsp. pepper
    1/2 frozen peas
    2 T. dry parsley
    1/4 cup Dry Idahoan Mashed Potato Flakes


In large saucepan, saute ham, onion and garlic in butter until onion is tender.

Add the next 7 ingredients and parsley. Cover and simmer for 30 minutes or until vegetables are tender.

Add peas and cook for 5 minutes. Add mashed potato flakes and serve.

Serves 8
Serving Size: about 1 1/2 cups
