Thai Quinoa

Ingredients

    *Spice Hunter Thai Seasoning, 2 tsp
    Lemon grass (citronella), fresh, 3 tbsp
    *kaffir or lime leaves, 1 serving
    *Quinoa Organic Earthly Delights, 1 cup
    *veggie bouillon cubes, Knorr, 1 serving
    Onions, raw, .5 cup, chopped
    Carrots, raw, 1 cup, chopped
    Water, tap, 2 cup (8 fl oz)

Directions

Saute carrot, onion, 1 tsp Thai spice for several minutes. Add quinoa and water and veggie bouillon. Stir till bouillon disolves, bring to boil. Add 1-2 lime leafs and lemon grass. Cover and simmer for 25 minutes.
