Introduction

This is a tasty low-cal, low-fat, low-carb soup - a great way to get your veggies in and fill up with very few calories. Makes a large pot to serve family. Ingredients

    4 cups low sodium chicken or vegetable broth
    4 cups water
    1 cup Carrots, raw, chopped
    1 cup Celery, raw, chopped
    1 cup Green Bell Peppers, raw, chopped
    1 cup Red Bell Peppers, raw, chopped
    2 cups Onions, raw, chopped
    4 cups Cabbage, raw, chopped
    2 cups Green Beans (snap), raw, cut into 1" pieces
    1 (16 oz) can of diced Tomatoes
    1 (8 oz) can of Tomato Sauce
    3-4 cloves of Fresh Garlic, minced
    1 tsp Thyme, dried,
    1 tsp Oregano, dried
    1 tsp Rosemary, dried
    1 Bay Leaf

Directions

Place all ingredients into a large soup pot and cook on medium heat for at least 30 minutes.

-- It cooks very well in a crock-pot: chop your raw veggies the night before, bag and refrigerate. Then dump them into your crock-pot along with all other ingredients.
-- This soup is delicious as is... but when I want to make it a meal, I add protein: pasta or lean hamburger, or cubed chicken breast. Calculate the calories separately.

-- MAKE IT MEXICAN: Replace the Italian Seasoning with:
2 Tbls Chili Powder
Dash of Cayenne (optional for added heat)
1 tsp Cilantro
1/2 tsp Cumin
* Make it a meal by adding 1/2 cup cooked rice and/or 1/2 cup cooked beans and/or 3-4 oz. cooked chicken or beef to your bowl. Calculate the calories separately. Delicious!
