Green Onion Potato Salad

Introduction

A lowfat tasty potato salad. A lowfat tasty potato salad.
Number of Servings: 4

Ingredients

    1/4 cup of cilantro
    1/4 Green Onion or Scallion
    1 tbsp of light mayo
    1/2 tbsp of white wine vinegar
    2lbs of potatoes
    1 tbsp of ground pepper

Directions

Cook potatoes in boiling water. While potatoes cool mix the other ingredients in a bowl. Add potatoes and let chill in the fridge for at least 20 mins. You can use any amounts of the ingredients. I used this amount to make enough for 2 people. Enjoy!
