Talk About Good: Eggplant and Shrimp Dressing

Introduction

My grandmother's casserole....

Substituted: EGGPLANT for Mirliton, omitted bacon, used egg whites for whole eggs
My grandmother's casserole....

Substituted: EGGPLANT for Mirliton, omitted bacon, used egg whites for whole eggs

Number of Servings: 5

Ingredients

    1 lb raw shrimp (I used frozen deveined)
    1 eggplant
    1 med yellow onion
    1/2 green bellpepper
    1/2 loaf french bread
    1/2 cup bread crumbs
    1/4 cup liquid egg whites
    1/2 T olive oil

    Seasonings: Salt, Pepper, Oregano, Sage, fresh Parsley, 1/3 cup green onion

Directions

1. Peel Eggplant....small dice....place in collinder with salt to tenderize and season
2. chop onion/bell pepper...sautee in 1/2 T olive oil
3. Add eggplant to the rest of veggies and sautee until tender
4. Add rough chopped raw shrimp and seasonings to mixture
5. Add french bread (torn into small pieces and pre soaked in chicken stock) to mixture....cook on med heat until stuffing starts to brown
6. Take of heat and add egg white and bread crumbs
7. Place stuffing in PAM'd casserole dish...bake at 350 until warmed through

*Optional: sprinkle w/ additional bread crumbs and dot with butter

Makes approx 5 servings
