Dark Chocolate Sorbet

Introduction

No ice cream maker needed. Can be vegan if added chocolate is vegan. No ice cream maker needed. Can be vegan if added chocolate is vegan.
Number of Servings: 8

Ingredients

    2 cups water
    1 cup white sugar
    2/3 cup unsweetened cocoa powder
    1/2 tsp of vanilla extract
    pinch of salt
    1 70% cocoa dark chocolate bar (3.5 oz) Chopped as finely as you can manage. I used Lindt, but any super dark chocolate bar will do, and as much or as little can be added to your taste.

Directions

makes 8 1/2 cup servings
1)Whisk together water, sugar, & cocoa powder over medium heat in a medium sauce pan.
2)Bring to boil, constantly whisking to prevent sticking and burning
3)Remove from heat and add chocolate. Stir until chocolate is thoroughly melted.
4)Pour into flat glass casserole dish and place in freezer for at least 6 hours, stirring every 1 or 2 hours to add air and give a fluffier texture.
**I haven't tried using this recipe in an ice cream maker and hope to try it soon, and welcome any suggestions to adapt it for an ice cream maker :)

  • It should work in an ice cream freezer as is. Just strain the mixture and chill it in the refrigerator for about 2 hours before putting it in the freezer. Sounds yummy, but those are pretty tiny servings, less than 1/2 cup. - 10/8/10
