Introduction

My mom made this every summer with food fresh from our garden out back. you could easily make it after a visit to the local farmer's market. My mom made this every summer with food fresh from our garden out back. you could easily make it after a visit to the local farmer's market.
Number of Servings: 8

Ingredients

    Olive Oil, 1 tbsp
    2 Onions, chopped
    Garlic, 2 - 3 cloves
    2 large Potato, chopped
    1 medium Summer squash
    2 small Zucchini
    3 fresh Tomatoes,
    1 tsp Basil,
    1 tsp Oregano
    salt and pepper to taste

Directions

* use a big 2 in deep 12 in fry pan,

Start with the oil, onions and garlic in the pan.
*you can use less olive oil if desired. but enough so the onion won't stick.
peel and chop the potatoes into bite size pieces. add
chop and add zucchini and squash
chop tomatoes and add.
season to taste...

makes about 8-10 1-cup servings
