ECONOMY GASTRONOMY Chilli Con Carne (turkey mince)

Introduction

Everyone has a version of Chilli Con Carne, this is the Economy Gastronomy version.

Can be served with rice, flour tortillas and bowls of soured cream, grated cheese and chopped avocado.

Ingredients

    2 tbsp vegetable oil
    1 onion, peeled and finely chopped
    2 cloves of garlic, peeled and finely chopped
    1 tsp ground cumin
    1 tsp ground coriander
    1 tsp chili powder
    1 tsp smoked paprika
    350 ml red wine
    1 * 400g tin chopped tomatoes
    splash of Worcestershire sauce
    2 red chillies, finely chopped
    1 * 4 portion Serving of ECONOMY GASTRONOMY basic turkey mince (recipe also on here)
    20 mushrooms (or there abouts)
    1 * 400g tin red kidney beans, rinsed and drained.
    1 stock cube, made into 250ml of stock

Directions

Serves 4

1. Heat the oil in a large, heavy based saucepan and fry the onion and garlic until softened and slightly browned.

2. Stir in all the ground spices and then pour in the red wine and let it simmer and reduce by about half.

3. next add the chopped tomatoes, Worcestershire sauce and chopped red chilli and again let this simmer for a few minutes.

4. Add your braised mince, mushrooms, kidney beans and beef stock and cook this gently, uncovered, for about 45 minutes until it's richly flavoured and thick in consistency.

5. When ready to serve, chop any accompaniments and place in bowls on the table and dig in!
