Chickpea stew

Ingredients

    1lb zucchini, sliced
    1lb carrots, sliced
    2 small onions or large shallots
    1 Tbs. olive oil
    1 tsp ground cumin
    2 tsp ground coriander
    1/2 tsp kosher salt
    4 Tbs. tomato paste
    4 Tbs. flour
    2 cups vegetable broth (from bouillion

Directions

Sautee shallots and carrots in olive oil until tender. Add flour and spices, cook for one minute. Add rest of ingredients, cook 20 minutes or until tender. Serve over rice or mashed potatoes.
Makes 18 0.5 cup servings.
