Introduction

Ingredients

2-15 oz cans of black beans, drained and rinsed
3 C. cooked lentils (1 1/2 C. dry)
1 C. chopped red onion
1 C. chopped green pepper
1 1/2 C. chopped tomato
1/2 Jalapeno Pepper, diced small
1/4 C. cilantro
1/3 C. olive oil
1/4 C. cider vinegar
1 Tbls. Dijon mustard
1 1/2 tsp. ground cumin
2 cloves garlic, minced
1/2 tsp. salt
1/4 tsp. pepper
Directions
In a large bowl, combine first six ingredients. In a jar with tight fitting lid, combine the remaining ingredients and shake well. Pour over vegetables and toss. Cover and refrigerate for at least 2 hours.
