Heat olive oil over Medium heat in frying pan. In a medium bowl, mix chicken, steak sauce and mesquite seasoning by hand until well blended. Shape into 4 oz patties. Place 1 Laughing Cow Light cheese wedge into center of each patty and shape around so cheese does not show. Place in pan and cook until golden brown on one side. Turn over and place lid on pan. Steam until chicken is cooked through; juices should run clear.
