Ingredients

1 box lime jell-o
2 oz fat free cream cheese
4 Tbs. Cool whip, fat free
3/4 c. canned pineapple chunks (no sugar added)
1/4 c. chopped pecans
Directions
Make Jell-o according to directions, using ice in place of cold water.
Whip the cream cheese until smooth. Once it is slightly gelled, pour a small amount in the cream cheese, adding gradually and whipping after each addition, until ½ of the Jell-o has been added. Set remaining Jell-O aside. Add Cool Whip and pecans to the Jell-o /cream-cheese mix and mix again until smooth. Set aside. Divide pineapple between 6 small parfait glasses. Pour plain Jell-o over the pineapple, dividing equally. Put in refrigerator until set. Carefully spoon cream cheese/ Jell-O over each parfait, dividing evenly. Chill until set. Serve as a side to any meal. 6 Servings.
