Gazpacho Salad

Gazpacho Salad

Ingredients

    Dressing
    2 garlic cloves, thoroughly crushed
    1 T EVOO
    1 T white balsamic vinegar
    Juice of a lemon
    Seasoning to taste - (I like a spice blend that has some kick, like Morton's Hot Salt or Tony Chachere's Cajun Seasoning)

    Veggies, all cut into roughly 1/2 chunks
    2 red ripe tomatoes
    1 yellow bell pepper, seeded
    1/4 large red onion
    1 medium cucumber

Directions

Whisk together the dressing ingredients in a medium bowl (that has a lid), until slightly emulsified. Add chopped veggies and toss thoroughly. Refrigerate overnight to allow the flavors to meld. Even better the 2nd & 3rd day!
