Chicken & Broccoli Casserole

Ingredients

    Chicken Thighs (5, boneless-skinless)
    Cream of Mushroom (2-10 oz cans)
    Milk - 2% (2 cups)
    Onions (1/4 cup, chopped)
    Frozen Broccoli Florets (3/4 package)
    White Rice (1 cup)
    Cheddar Cheese (1/4 cup, shredded)
    Salt & Pepper to taste

Directions

* Preheat oven to 350 degrees
* Cook rice according to instructions on bag
* In large bowl mix soup, milk, chopped onions, frozen broccoli, salt & pepper (optional, but included in nutrition info)
* When rice is thoroughly cooked add it to soup mixture and mix well
* Pour mixture into large casserole dish and spread evenly
* Top with Chicken Thighs, cover with aluminum foil, and bake in oven for 30 minutes
* Remove foil, sprinkle cheddar cheese over casserole, and return to oven for 5 minutes
* Remove from oven, let sit 2-5 minutes, then serve!
