Ma's Lime Coconut Chess Bars

Introduction

This is sour and a little sweet. Does help to satisfy a craving for some sweet when everyone else around is having goodies and trying to stay healthy. This is sour and a little sweet. Number of Servings: 40

Ingredients

    Crust
    1 cup Butter
    1/2 cup Powdered Sugar
    2 cups all purpose king arthur unbleached white flour
    1 3/4 Coconut, sweetened flaked
    pinch Kosher Salt - Diamond

    Filling
    2 cups Granulated Sugar
    1/3 cup all purpose king arthur unbleached white flour
    1 tsp Baking Powder
    4 large Egg, fresh
    1 Tbls Lime Peel
    1/3 cup Lemon Juice - fresh
    1/3 cup Lime Juice - fresh
    Pinch of kosher salt

Directions

This makes 40 bars in a 5x8 pan.

Preheat oven to 350 degrees.
Prep 5X8 pan with foil letting ends extend above the pan and lightly coat foli with nonstick spray.

Toast coconut on baking sheet for 8 minutes stirring only untily lightly toasted. Let cool.

Make crust until slightly crumbly add in coconut.
Crust
1 cup Butter
1/2 cup Powdered Sugar
2 cups all purpose king arthur unbleached white flour
1 3/4 Coconut, sweetened flaked
pinch Kosher Salt - Diamond
Press mixture into pan.
Bake 10-12 minutes until crust just begins to lightly brown at the edges.

Filling
whisk together sugar, flour and baking poder.
Whisk in eggs, lime peel, lime and lemon juice until well blended.
Pour over the hot crust.

Bake for 25 minutes until topping is golden brown and set.
Cool completely in pan on wire rake.

Holding foil ends lift to cutting board.
Dust with confectioner's sugar cut into bars.
